Make These Quick And Easy Lemon Meringue Bars
These lovely lemon meringue bars are quick and easy to make. They are the perfect dessert to whip up for a Sunday brunch this summer.
To make the the shortbread crust (bottom), you will need:
- 1 cup all-purpose flour
- 1/2 cup room temp unsalted butter (1 stick)
- 1/4 cup powdered sugar
- 1/4 tsp vanilla
- 1/4 tsp salt
For the gorgeous lemon layer on top, you will need:
- 2 large whole eggs
- 1 large egg yolk
- 1 cup white sugar
- 2 tablespoons all-purpose flour
- 1/4 cup fresh lemon juice
- 1 tbsp grated lemon peel
